 Date & Tahini Fridge Fudge | Sugar-free, Gluten-free

If you’re anything like me, your sweet-tooth kicks in just after dinner and it doesn’t go away until you give it what it wants. Fortunately, my health goals kick in at just about the same time to remind me to keep things healthy and simple.

So, to help you satisfy your cravings and maintain your healthy lifestyle at the same time – we found this super easy, super healthy recipe ideal for a post-dinner treat!Tahini Fudge

You’ll need:

1 cup of pitted dry dates

½ cup of light tahini

2 tablespoons of coconut oil or extra virgin olive oil

A pinch of salt

Method:

Line a small baking tin – about 11 cm x 17 cm– or similar-sized container (we use a glass lunchbox) with baking paper.

Slice one of the dates finely and set aside to decorate the top of the fudge. Place the rest of the dates in a food processor with the tahini, coconut oil, and salt and blend to a smooth, thick paste. Taste and add more salt if desired.

Transfer the mixture to the prepared tin and use a spatula to press the mixture down evenly.

Decorate the top with the date slices and a sprinkle of sesame seeds or desiccated coconut (if using), pour over any leftover oil from the food processor and press down gently.

Freeze or chill in the fridge until firm – about 15 minutes in the freezer and 30 minutes in the fridge. Slice into squares, then store in the fridge or freezer. Eat chilled/frozen straight from the fridge/freezer.
