Healthy Sweet Potato Cookies
Sweet potatoes are one of my favourite foods. They are extremely versatile and they taste good no matter how you prepare them. From simply roasting them in the oven to adding them into a brownie mixture, sweet potatoes are always a winning ingredient. Here’s one more delicious way to use sweet potato in your baking!
- Two large sweet potatoes, baked with peel removed and mashed
- 4 large eggs
- 6 tablespoons natural almond butter or peanut butter
- 1 cup oatmeal
- 1 teaspoon cinnamon
Preheat oven to 180 degrees C. Prepare a baking tray with cooking spray or coconut oil. Combine the eggs and almond/peanut butter and beat until smooth. Then add the sweet potatoes and stir lightly to combine. Stir in the oatmeal and cinnamon. Drop the mixture by the tablespoon full onto the baking tray and flatten slightly with a fork. Bake for about 20-25 minutes. Makes about 24 scrumptious cookies.
